Caper & Raisin Dressing

She’s a little sweet, a little tart, and little salty. This dressing enlivens soft greens, roasted veggies, even meat hot off the grill loves a bit of it.

I’m not a big one for measurements when it comes to salad dressings; everyone has their own preference for oil to acid ratio among other things, so take this as a rough guide and go your own way. 

Blend until smooth:

1 Tbsp capers

Small handful raisins (or sultanas) soaked in 2 Tbsp hot water for 10 mins – throw the fruit along with the water into the blender

2 tsp nutritional yeast

2 cloves garlic

2 Tbsp white wine vinegar (I used chardonnay vinegar)

2 tsp lemon juice

1/4 cup evoo

A little salt and a pinch of white pepper

Makes about half a cup of dressing.
